Carbonara

Ingredients

Spaghetti

3 egg yokes

5 oz Parmesan cheese

1/2 pound of bacon

Garlic Powder

Black Pepper


Directions

Cook spaghetti till al dente, strain and keep pasta water.


Separate yolks from whites. Add in Parmesan cheese and mix. Will be thick. Add garlic powder and plenty of black pepper. Set aside.


Cook bacon till brown and remove from pan and turn off all heat.


Add 3 ladles of hot pasta water to egg mixture to temper the eggs.


Add noodles into the same pan and stir fry for a few moments. Remove from burner to prevent eggs from scrambling.


add tempered egg and cheese mixture to noodles and stir vigorously. Add more pasta water for a thinner sauce. Taste and add more pepper, salt or garlic powder to your liking.


Add bacon back into pasta and stir. Serve and top with more bacon.
